Sokerittomat marjaisat/suklaisat banaanimuffinsit
4dl jauhoja (esim. riisijauho, tattari-, manteli-, kookos- jne)
1,5dl hiutaleita (kaura-, tattari-, quinoa- tai kookoshiutaleita)
1tl psyllium jauhetta
1,5tl ruokasoodaa
1tl kaardemummaa
1tl vaniljajauhetta (ei viinimarjaversioon)
4 keskikokoista banaania
2rkl valkoviini/omenaviini etikkaa
4rkl öljyä (mieto oliiviöljy/kookosöljy/avocadoöljy...)
1dl vettä (tai siemenmaitoa)
Mustikkaversioon 3-4dl (pakaste)mustikoita
Punaviinimarjaversioon 2dl punaviinimarjoja (tuore/pakastettu)
Suklaahippuversioon 3dl sokeritonta suklaata/raakasuklaata/tms. pilkottuna paloiksi
Suklaaversioon 3-6rkl kaakaojauhetta
Sekoita kuivat aineet keskenään. Blendaa muut aineet (paitsi marjat/suklaahiput) ja sekoita kuiviin aineisiin kunnolla. Varovasti sekoita marjat/suklaa joukkoon (niin ettei marjat litisty ja värjää taikinaa).
Paista uunissa 175C n. 20min. Valmiit muffinsit ovat päältä kypsiä ja tuntuvat joustavilta kun hieman painaa.

I made a few versions of these delicious "health muffins" :) In one version you use blueberries or cranberries,in another you use choc chips, and in one they are just chocolate ones. Of course you could just make plain ones, or use seeds/nuts/raisins to make a breakfast/snack muffin, or something else you like. For a so called flourless version (grain free) use almond flour and coconut flakes (desiccated coconut). I think the flakes can probably be left out completely or substituted with some flour (haven't tried this yet though). Otherwise the recipe is glutein free.
The dish is dairy free, egg free, glutein (& grain) free, sugar free, soy free, nut free & vegan.
Sugar free muffins with berries or chocolate
4dl flour (for example rice flour, buckwheat-, almond-, coconut-..)
1,5dl flakes (oat flakes, buckwheat-, quinoa-, coconut-...)
1 teasp psyllium
1,5 teasp baking soda
1 teasp cardamon
1 teasp vanilla powder/extract (not for the red currant version)
4 medium bananas
2 tbsp white wine/apple cider vinegar
4 tbsp oil (mild olive oil/coconut oil/avocado oil..)
1dl water (or seed milk)
For the blueberry version 3-4dl (frozen) blueberries
For the red currant version 2dl red currants (fresh/frozen)
For the choc chip version 3dl sugar free chocolate/raw chocolate chopped
For the chocolate version 3-6tbsp cocoa powder
Mix the dry ingredients together. Blend the rest (apart from the berries/choc chips) and mix with the dry ingredients. Mix very well. Add the berries or choc chips and mix carefully so the berries don't burst and color the dough.
Bake in 175C for about 20min. The muffins are cooked once they look cooked on the top and are still a bit springy when you press them from the center.
